THE GOOD FOOD

Villa Castiglioni’s cuisine welcomes those who, with curiosity and love, want to rediscover Tuscan food, through its connection with our region, its seasons, and the quality of its most genuine products. A gastronomic experience instilled in the traditions of our country, the history of our family, and the genuine wisdom of ancient flavours. The family table awaits you with a series of appetizers, sides, and main dishes, served for a joyful meal to be shared. The menu is the result of a fine match between the seasonal vegetables of our garden, those of the neighbouring farmers, many aromatic herbs handed down from tradition and freshly picked from our fields. The meats come from the best local breeders, typical cheeses from small local producers, our own preserves, and when in season, another local ritual is the truffles. The proximity to the coast, being less than an hour’s drive, also gives us the privilege of fresh daily fish which from time to time, we integrate into our menu which changes seasonally. Our staff can cook and serve special dinners in an elegant table setting for very special occasions. You can also order a relaxed lunch or picnic basket to be picked up in your own time. In the kitchen laboratory, you can learn the secrets of good Tuscan cuisine and traditions that have been lost in time, such as the recognition and the wise use of wild herbs.

THE FARM

Economically sustainable, ecologically mindful, and socially responsible. Our way of doing business is a sustainable system that preserves the environment and identity of the land. Here at Villa Castiglioni, we grow a range of organic products including extra virgin olive oil, preserves, honey, saffron, and a line of well-being products.

The farm, organically certified in 2013, covers an area of about 30 hectares and counts olive groves, fruit trees, horticultural and medicinal herbs, reserves, woods, shrubs, and pastures in search of a balance between biodiversity and productivity. Through our oil, we are happy to help consolidate and spread the culture of quality extra virgin olive oil, its extraordinary properties, and its infinite beneficial uses.

OUR OWN OIL

The farm houses over 2000 olive trees from the typical Tuscan varieties of our zone, Frantoio, Leccino, Moraiolo, Pendolino, grown with natural and organic methods. We start picking the olives from mid-October where early harvesting and daily milling are the results of a precise choice that pushes us to sacrifice the yield in order to enhance the characteristics of the product. The specifics of our regions method follows a very careful processes with growing, harvesting, and milling. This is the reason for the exceptional quality of Villa Castiglioni Extra Virgin Olive Oil.

ACTIVITIES AND EXPERIENCE

While using the villa as the central base for your unforgettable holiday, you will have access to our exclusive services, activities, and experiences. Private classes, catered parties, milestone events, and bespoke visits to olive groves and vineyards to learn the secrets of the cultivation and production of oil and wine are just a few of the things we offer. Thanks to our passion and experience, the organization of excursions, guided tours, unusual and extraordinary itineraries will make you discover a different Tuscany.

Additional extra services such as a full-time cook, car rental with or without a driver are also available to our guests.

WINE TOUR

From the famous Antinori wineries to the many small producers of Chianti and Brunello up to the marinescents of Bolgheri wines; routes to discover independently, or guided by our selected partners.

OLIVE OIL TASTING

You can taste different oils of local producers, under the guidance of an expert miller and taster, to appreciate the characteristics that make the Tuscan oil a unique product. The tasting will be accompanied by a selection of Villa Castiglioni artisanal preserves.

TREKKING - ON FOOT AND BY BIKE

The region offers endless ideas for outdoor activities: from walks in nearby fields and woods (maybe looking for mushrooms or wild herbs!) to more challenging trails, immersed in nature, national parks, river parks (like the nearby Val D’elsa park) which has a total of over 200 thousand hectares of protected areas. The Via Francigena, the ancient road that in the Middle Ages linked Canterbury to Rome was rediscovered by the modern wayfarers. Since 2001 the European Association of Via Francigena coordinates the development and enhancement of a journey through Italy and Europe that traces the history of our continent. Cycling routes: Tuscany has made and continues to make the history of this sport thanks to its great champions and the “Eroica”, one of the most evocative competitions in the world. In October the white roads that wind through the vineyards of our immediate surroundings become a famous race internationally acclaimed enough to be exported in Japan and the United States. Spaces that hold simplicity and beauty are linked to nature and a territory rich in traditions and passion.

BEACHES RIVERS AND SPAS

Whether it’s a refreshing bath or the warmth of thermal waters, Villa Castiglioni represents an ideal starting point to reach the coast and the many streams that furrow our valleys. There are countless natural spas scattered throughout the surrounding area. It’s just less than one hour to reach Castiglioncello and its beaches, and a little more for the Versilia coast and Le Cinque Terre. The natural hot thermal springs of Petriolo are at 40 minutes, Rapolano Terme one hour, and Bagno Vignoni is one and a half hours. In less than 20 minutes you can reach the Val d’elsa River Park, with its freshwater streams and rock pools or the cycling routes along the river Pesa.

COOKING CLASSES, FORAGING, AND...

Cooking classes can be organized in one of our kitchens, concluding with a dinner based on what has been prepared together. Guests actively participate in the creation of the menu, choosing from traditional Tuscan recipes. Through dedicated workshops, you can also learn the secrets of traditions that have been lost in time such as the recognition and the wise use of wild herbs, true delights, and precious allies for ancient flavors as for healthy infusions. Depending on the season you could also join a plant processing workshop on preserves, natural fermentation, and small cosmetics.
